Choked up when cold and cruising

Just bought this clean Ultima 2.9 12v 1995, love it already and hate at the same time, drinks fuel when i have a strange inconsistant problem, On cold start ups or warm or when cruising on the motorway the engine seems choked up and i can smell the unburnt fuel, the car is then non responsive and coffs at me back down the air intake, i can clear it some times by Switching off the engine or thrashing the hell out of it, which ever way Im using a lot of fuel, any Ideas would be appreciated.
