Ken

Easiest way to check the fan is to disconnect the plug from the thermal switch and bridge the connections with a piece of wire, if the fan cuts in then this points to a faulty thermal switch, pretty easy to change just a deep socket, switches cost about £10 or so i think.  If it has only one wire just connect this to ground and that should turn the fan on too.

hi there

does the fan work at all? take the plug off the thermostat and bridge it. the fan(s) should then come on with the ignition.
is the dash working ok? goes into the red box?
has the thermostat been changed before? might be an idea to change it anyway, after the fix.

mk 3 and mk 4 Escorts had a bypass for emergencies but I have only seen a few Mk 5 's with it ...it's worth a check though ..there is a male and female connector laying on the wiring loom under the bonnet between the strut top and the wing rail on the drivers side .. default is the connector  unconnected .. just connect them to bypass the fan sensor switch .. or simply as the lads say .. pull off the two wire sender connector < bit tough > and join the two wires to test the fan .. regards .....
