Welcome to the site So it is misfiring? Losing power then picking up? First thing to check is the basics, i.e. plugs and leads. Does it only happen when accelerating or over certain revs?

I'd wager the coil packs are starting to fail..... If they are failing, it will notice more on the open road, when the car is under load....a bit like missing a beat every now & then. It doesn't seem to notice at tickover or revving though

Have a look at the wiring to the coil packs too, it is known for insulation problems. Remove the outer plug cover, 10 bolts IIRC. The coil packs and wiring is under there, have a look at the state of the wiring, might be worth re-insulating with some tape if necessary. Actually, in Car Mechanics magazine this month, there is a servicing item on a 2.0 16v Scorpio and there are some good pictures and write up on this problem.
